Current limitation for Grid in MS Dynamics CRM:

For all versions of Microsoft Dynamics CRM, the GRID doesn’t allow to edit the values under it. You need to open the entity by double clicking it for editing.

Dynamics 365 does provide utility to edit the values in the grid. You need to open multi-select option-set but any existing or earlier dynamics CRM solution even if upgraded, the field would not support multi-select option set and would still require creating a new field.
